Cream of Avocado Soup Recipe
Pour into espresso or sake cups for a great addition to your party buffet. Serve with mini breadsticks.
- 3 ripe, Fresh Hass Avocado, seed removed and peeled
- 1 cup cream
- 2 cups chicken broth
- 1⁄2 tsp. salt, or more to taste
- 2 Tbsp. fresh lime juice, or more to taste
- cream fraiche for garnish
- 2 tsp. chives, chopped
Place avocado, cream, chicken broth, salt and lime juice in a blender or food processor. Blend until smooth. Taste and add more salt and lime juice if necessary. Chill before serving with a tiny dollop of crème fraiche and a sprinkle of chopped chives.
