Baked potato skins to dip for the pigskin party!
Recipe provided by the California Avocado Commission
Ingredients
-
3 3 3lbs. POUNDWeightMedium Russet potatoes
-
1/2 0.5 0.5lb. POUNDWeight Butter
-
2 2 2tsp. TEASPOON_USVolumeGarlic powder
-
1 1/2 1.5 1.5tsp. TEASPOON_USVolumeseasoned salt
-
1 1 1tsp. TEASPOON_USVolumeGuacamole (recipe follows)

Guacamole
-
Yield: approximately 3 cups

7 7 7Ripe medium Fresh California Avocados, seeded and peeled

3 3 3Tbsp. TABLESPOON_USVolumeLime or lemon juice
-
1 1 1Tbsp. TABLESPOON_USVolumeSeasoned salt
-
2 2 2tsp. TEASPOON_USVolumeGarlic powder
Instructions

Thoroughly wash unpeeled potatoes and cut into small wedges.

Lay wedges on large baking sheet.

In a saucepan melt butter and stir in seasonings.

Generously brush wedges with butter mixture.
-
Place in a 425 degree F oven for 25-30 minutes.

Serve with Guacamole for dipping.

Guacamole Preparation
-
Coarsely mash avocado leaving some chunks.

Add remaining ingredients and mix to blend.
