Skewered Garlic Butter Shrimp Recipe

Ingredients
  • 5 5 5lbs. POUNDWeightLarge or jumbo size shrimp, peeled and deveined
  • 3/4 0.75 0.75cup CUP_USVolumeButter or margarine
  • 3/4 0.75 0.75cup CUP_USVolumeOlive or avocado oil
  • 6 6 6Garlic cloves, minced
  • 5 5 5Tbsp. TABLESPOON_USVolumeFresh parsley, minced
  • 4 4 4Tbsp. TABLESPOON_USVolumeFresh lemon juice
  • Guacamole (recipe follows)
  • Delicious and Quick Guacamole
  • 6 6 6Ripe medium Fresh California Avocados, seeded and peeled
  • 3 3 3Tbsp. TABLESPOON_USVolumeFresh lime or lemon juice
  • 1 1 1Medium tomato, diced
  • 1/4 0.25 0.25cup CUP_USVolumeOnion, chopped
  • 1 1 1Tbsp. TABLESPOON_USVolumeSeasoned salt
  • 2 2 2Tbsp. TABLESPOON_USVolumeGarlic powder
Instructions
  1. Thread 4 shrimp close together on each thin wooden skewer.
  2. Melt butter in pan.
  3. Add oil, garlic and parsley; heat just until bubbling, then remove sauce from heat.
  4. Place skewered shrimp on a rack in a pan; brush generously with garlic sauce.
  5. Broil shrimp 4 inches from heat until they turn bright pink (about 4 minutes).
  6. Baste at least once with garlic sauce.
  7. Turn and broil on other side about 3 minutes or until shrimp feel firm when pinched; baste once.
  8. (Or place skewers on a greased grill about 6 inches from hot coals. Cook and baste as directed for broiled shrimp.)
  9. Place each skewer on serving plate an lightly sprinkle with lemon juice. Serve with Guacamole.
  10. Guacamole Preparation
  11. Coarsely mash avocado, leaving some chunks.
  12. Add remaining Ingredients and mix to blend.
