1 1 1lb. POUNDWeightred plums, pitted and roughly chopped

Instructions

Baked Avocado
Fry the onion in the sesame oil. Mix with all the other stuffing ingredients. Season it to taste with salt and pepper. Place spoonfuls into the avocado cavity. Bake at 400 degrees F for 5 minutes, then transfer to a broiler until the top is light brown. Do not over cook the avocados as they will turn bitter. Serve with an oriental plum sauce.

Plum Sauce
Heat the sunflower oil. Fry the onion, garlic, chile, all-spice and curry powder. Add the plums, soy sauce, orange zest and juice, lemon zest and juice and honey and simmer for 1 hour 15 minutes, until thickened and smooth. Stir often to prevent it from sticking on the bottom of the pot.

I made this on Monday night and teddy, Aleah and Eddie LOVED it! Eddie claims it is the BEST recipe that I've ever made. It takes some time to chop/dice, etc, but it was soooo delicious. Very unusual combination, but all the flavors really compliment each other. We all had to have seconds!
