Ingredients:
- 6 ripe, Fresh Hass Avocados, seeded and peeled
- 1/2 onion, chopped
- 1 large clove garlic, crushed
- 1 small tomato, diced
- 6 oz. Monterey Jack cheese, grated
- 2 green chiles, diced
- 1/3 cup fresh cilantro, finely chopped
- 3 Tbsp. fresh lime juice
- 1 tsp. seasoned salt
Instructions:
- In a large mixing bowl, coarsely mash avocados, leaving some chunks.
- Add remaining ingredients and mix to blend.
Serving Suggestions:
Serve with crisp tortilla chips.
To store Guacamole, place a piece of plastic wrap directly on the surface of the Guacamole and refrigerate.
* Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Award Winning Guacamole
12/31 Excellent guacamole! Tonight is Taco night and I prepared this for our meal. My husband was really impressed, and that says a lot, and I really liked it too! Thank you for sharing such great recipes. Happy New Year!

Thank you for taking the time to share your feedback with the Hass Avocado Board. The pit or seed of the avocado aids in preventing discoloration resulting from oxidation by limiting the surface area exposed to the air. We recommend rather than including the seed that you include an acidic agent in your dish. Lemon, lime, white vinegar or tomatoes can all be used as an acidic agent in combination with an air tight container or tightly covered clear plastic wrap to limit exposure to the air. I've found if you store leftover Guacamole, with the pit of the avocado, it will stay for an extended period of time, without discoloring.

Potluck I would have to triple this as it is so good it would be gone in a few seconds. Triple MIGHT last a few minutes. Keep the great recipes coming I love them. Jennie

Recipe
This is very close to my own recipe. However, if you find yourself without all of the fresh ingredients, a good substitute for a few would be to use chunky salsa instead of the tomatoe, chil peppers, cilantro and chopped onion. Even though some salsas may have garlic, I add fresh garlic too. I am anxious to try the Monteray Jack though. And, dont't forget to leave the chunks. Thanks!
