Chipotle Sauce Recipe
Chipotle Sauce for the Hass Avocado, Black Bean, and Pineapple Salad.

Ingredients:
- 3 red peppers, roasted, peeled, seeded & diced
- 1/4 cup fresh squeezed lime juice
- 2 1/2 Tbsp. chipotle, pureed
- 2 shallots, minced
- 2 cloves garlic, minced
- 1 oil, corn or vegetable
- salt and pepper to taste
- Hass Avocado, Black Bean, and Pineapple Salad
Instructions:
- In a bowl, whisk all ingredients together (Includes 2 cloves of minced garlic, 2 minced shallots, chipotle pureed, red peppers, 1/4 cup freshly squeezed lime juice, 1 cup of oil, salt and pepper to taste). Pour into a squirt bottle.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
