Grilled Chicken Avo-Wheelies Recipe

Roll up some excitement for lunch with Hass Avocados.

Re-Calculate: Ingredients

Ingredients:
  • 1 1/2 cups chopped grilled chicken
  • 1/2 cup corn kernels, rinsed and drained
  • 1/4 cup finely chopped red onion
  • 1/2 cup prepared barbecue sauce or salsa
  • 4 flour tortillas
  • 1 ripe, Chilean Hass Avocado, seeded, peeled, and mashed
  • Additional barbecue sauce or salsa for dipping
Instructions:
  1. Combine chicken, corn, onion and sauce or salsa in a large bowl.
  2. In the center of each tortilla, spread about 3 Tbsp. of mashed avocado to cover entire surface.
  3. Next, place 1/2 cup chicken mixture and spread evenly over avocado spread.
  4. Carefully roll stuffed tortilla tightly.
  5. Place roll seam down on a cutting board. With a very sharp, serrated knife, cut the roll into 6 even pieces.
  6. Serve with sauce or salsa for dipping.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Low Calorie food

I made this and it was delicious. I didn't make it into small rolls but left it in a complete roll for a meal. Yammie

This recipe sounds very good, and quick to make up. However, we in Texas know that flour tortillas should always be toasted before wrapping, as the ones in the packages are only partially cooked, like brown and serve rolls. Tortillas can be toasted on a gas burner, the old way, or in a large skillet, hot and dry.
