Grilled Halibut with Avocado & Chipotle Cream Sauce Recipe
This simple 3-step grilled halibut recipe can be whipped up on a minute’s notice. Season the halibut with basic ingredients like olive oil, seafood seasoning, and lemon juice and grill to perfection. Then make the dish sing with a savory avocado chipotle cream sauce.

Ingredients:
- 4 (5 oz.) halibut filets
- 4 tsp. fresh lemon juice, divided
- 2 tsp. virgin olive oil
- 1 tsp. seafood seasoning
- 1 ripe, Fresh Hass Avocado
- 1 canned chipotle chili (plus 1 teaspoon liquid)
- 3 sun-dried tomato (packed in oil) halves
- 1/4 cup vegetable broth
- 2 Tbsp. flat leaf parsley, chopped
- lemon wedges, garnish
Instructions:
- Heat a grill pan (skillet with ridges) to medium heat. Sprinkle fish with 2 teaspoons lemon juice. Rub with olive oil and season with seafood seasoning.
- Grill fish for three minutes per side (depending upon thickness of filets).
- Place avocado, chipotle pepper & juice, sun-dried tomatoes and vegetable broth in blender or food processor and process until smooth.
Serving Suggestions:
To serve: Place fish on a platter and spoon avocado sauce over fish. Sprinkle with parsley and serve with a lemon wedge, if desired.
