Chilled Hass Avocado Soup Recipe
This chilled soup recipe is easy to make and great for hot summer days. Blend avocado, cucumber, lettuce, green pepper, and herbs until smooth for a refreshing and creamy, cold soup entrée or starter.

Ingredients:
- 2 ripe, Fresh Hass Avocados, seeded, peeled and diced
- 1 cucumber, peeled, seeded and cubed
- 2 Tbsp. freshly chopped dill
- 2 cups hand-torn romaine lettuce
- 1 medium green pepper, diced
- 2 scallions, thinly sliced
- 2 tsp. chopped garlic
- 1 cup water
- 1 fluid oz. vodka, optional
- Vinegar to taste
- Lemon juice, to taste
Instructions:
- Place all of the ingredients except vinegar and lemon juice in a blender. Puree until smooth.
- Season with vinegar and lemon juice, to taste. Consistency of soup may be adjusted by adding more water.
- Serve chilled.
Serving Suggestions:
If desired, top with a spoonful of plain yogurt; garnish with chopped tomatoes and green peppers.
*Large avocados are recommended for these recipes. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
