Pork Fajitas with Hass Avocado, Red Onion and Tomato Recipe

Feel like making an easy pork fajitas recipe for dinner tonight? Fill your skillet with pork, fajita seasonings and prepare some terrific fajita toppings like avocado, red onion, and tomato. You can easily adjust the recipe to use up any extra or leftover pork or beef.

Ingredients:
  • 2 ripe, Fresh Hass Avocados, seeded and peeled
  • 1 orange, juiced
  • 1 lb. pork roast or tenderloin, trimmed of fat
  • 2 cloves garlic, crushed
  • 1 tsp. paprika
  • 1 tsp. seasoned salt
  • 1 tsp. pepper
  • 1 Tbsp. canola oil
  • 1 small red onion, peeled and diced
  • 2 cups cherry or grape tomatoes, sliced in half
  • 1 jalapeño pepper, seeded and minced, optional
  • 8 flour tortillas, warmed
Instructions:
  1. Cut half the avocado into ½-inch cubes. Place in a shallow bowl and pour orange juice over the avocado cubes. Slice remaining avocado; reserve.
  2. Cut pork in strips about 1-inch by ½-inch.
  3. In a small bowl, make a paste with the garlic, paprika, seasoned salt and pepper. Rub paste all over pork strips.
  4. Heat oil in a large skillet over medium-high heat. Add pork and stir fry for two minutes, stirring frequently.
  5. Add half of the diced onion and the jalapeño pepper to the skillet. Cook and stir for two minutes.
  6. Add half of the sliced tomatoes and cook for one more minute or until the pork is cooked through and the tomatoes are warm.
  7. Gently stir in the diced avocado and juice.
  8. Serve the fajitas with flour tortillas and garnish with the remaining onions, tomatoes and sliced avocado.
Serving Suggestions:
Serve with rice and vegetables for a zesty, easy-to-prepare meal.

* Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Best Fajita I have ever had!

This was the best fajita I have ever had! I added rice to the mix. I also added some red pepper flakes to teh oil as it was heating up. Really juicy meat, and the onion, tomato, peppers and avocados tasted great together! Taking some to lunch tomorrow, and then probably making it again later in the week!
