Avocado Fiesta Salad Recipe

Ingredients:
  • 2 fully ripened Avocados from Mexico, seeded, peeled and diced (about 2 cups)
  • 1 medium-sized red bell pepper, diced (about 1 cup)
  • 1 medium-sized yellow bell pepper, diced (about 1 cup)
  • 1 large cucumber, seeded and diced (about 1 cup)
  • 1 small zucchini, diced (about 1 cup)
  • 1/2 cup finely chopped jalapeņos (no seeds or ribs)
  • 2 green onions (scallions), chopped (about 1 cup)
  • 2 Tbsp. chopped parsley
  • 1/4 cup fresh lime juice
  • 3 Tbsp. olive oil
  • 1 tsp. ground cumin
  • 1 Tbsp. sugar
  • 1 Tbsp. salt
  • 1/2 tsp. dried oregano
Instructions:
  1. In a large bowl, combine avocados, bell peppers, cucumber, zucchini, jalapeņos, green onions and parsley.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, sugar, salt and oregano. Pour over avocado mixture; toss gently.
