Creamy Hass Avocado Frosting Recipe
Deliciously rich and sweet like a traditional buttercream frosting, but without the butter! The pretty green color comes naturally from the Hass Avocado, so there’s no need to add artificial food coloring.

Ingredients:
- 1 ripe, Fresh Hass Avocado, peeled and seeded
- 1 Tbsp. fresh lemon juice
- 1 pinch salt
- 1 lb. powdered sugar, sifted
- Water, as needed
Instructions:
- Place avocado, lemon juice and salt in the bowl of a stand mixer or medium mixing bowl. Mix on medium-high speed for about 3 minutes, or until the avocado is smooth and creamy.
- Mix in the powdered sugar a little at a time until it is in all incorporated. Beat on high speed until light and creamy.
- If the frosting is too thick add in water a few drops at a time until desired consistency is reached.
- Use immediately or store in refrigerator with surface covered by plastic wrap until ready to use.
Serving Suggestions:
Use to frost cakes, cupcakes, cookies or brownies.
* Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Thank you for your comment. The lemon juice called for in this recipe acts as an acidic agent to help prevent oxidization or “browning” and the sugar also helps to keep the pretty green color. The frosting can be kept in an air-tight container in the refrigerator for a day or two, and leftover frosted cake should be covered and refrigerated. What is the shelf life of a cake frosted like this? Won't it brown within minutes of hitting air?
