Crunchy Avocado Roll Recipe

Serve up a roll with a spicy CRUNCH! This delicious avocado roll recipe is covered in wasabi flavored panko breadcrumbs and chile strips.

Re-Calculate: Ingredients

Ingredients:
  • Crunchy Wasabi Crumbs (recipe follows)
  • 12 each soy wrappers with sesame seeds
  • 9 cups (3 lbs.) prepared sushi rice
  • 4 each ripe, Fresh Hass Avocados* peeled, each cut into 12 slices
  • 48 (about 1/8-oz.each) Fresno red chile strips, fresh
  • 1 1/8 cups fresh cilantro leaves
  • 2 oz. soy sauce
  • As needed, pickled ginger
  • As needed, wasabi paste
Crunchy Wasabi Crumbs - Yield: 1 ½ cups, 12 servings
  • 2 cups Japanese-style panko breadcrumbs
  • 1/8 cup wasabi paste
  • 1 bunch cilantro, with stems, coarsely chopped
Instructions:
  1. Per Order (one serving)
    Place one sesame soy wrap on cutting board.
  2. Top with 4 oz. prepared sushi rice and spread to cover leaving ½-inch of wrap not covered for the top edge. Flip over so rice is now on the board.
  3. In the center of the soy wrapper place a horizontal line of 4 slices of avocado.
  4. Top the avocado with 4 slices of Fresno red chile strips.
  5. Top with 1 1/2 Tbsp. cilantro leaves.
  6. Roll up from the bottom, tucking in tightly to close and seal.
  7. Place the roll with seam side down and use the sushi mat to shape, form and tuck in sides.
  8. Roll this in 2 Tbsp. of Crunchy Wasabi Crumbs to coat evenly.
  9. Slice in half then slice each half in thirds for 6 even slices.
  10. Serve with a pinch of pickled ginger, a pinch of wasabi paste and 1 tsp. of soy sauce.
Crunchy Wasabi Crumbs
  1. Place breadcrumbs, wasabi and chopped cilantro in a food processor and pulse until crumbs are smooth and bright green.
  2. Transfer to a paper lined sheet pan and bake at 300 degrees F (no fan) for 10 - 12 minutes.
  3. Remove from oven, mix and turn crumbs and place back in the oven.
  4. Bake for an additional 10 - 12 minutes or till the crumbs are dry and crunchy but not brown.
  5. Cool to room temperature, label and store covered at room temperature.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
