Easy Hass Avocado Pie Recipe
Avocados make for one cool and creamy dessert! The predominant flavors in this easy pie recipe are tangy lemon zest and sweet caramelized almonds.

Ingredients:
- 1 (8-oz.) pkg. cream cheese
- 1 ripe, Fresh Hass Avocado, seeded and peeled
- 1 lemon, juice and zest only, to taste
- 3/4 cup whipping cream
- 1 (5 ¼-oz.) pkg. vanilla-flavored pudding mix
- 1 prepared graham cracker crust
Almond Topping
- 1 cup slivered almonds
- 2 Tbsp. butter
- 2 Tbsp. sugar
Instructions:
- Whip together cream cheese, avocado and lemon juice until creamy.
- Slowly add pudding mix and whipping cream until desired thickness.
- Pour mixture into crust, cover and chill for 5 hours.
Almond Topping Instructions
- Line a baking sheet with wax paper or non-stick foil; set aside.
- Melt butter and sugar in a frying pan until they are just beginning to become liquid.
- Add almonds and stir continuously until the mixture begins to foam and become a light golden brown.
- Remove mixture from heat. then pour onto prepared baking sheet; allow to cool.
- Once the almond mixture becomes cool and solid, break into pieces and add to the top of the pie.
Serving Suggestions:
Sliced avocados and bananas can also be used in place of or in addition to the almond topping. Add these immediately before serving.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
