Ingredients:
- 2 ripe, Fresh Hass Avocados
- 1 cucumber, de-seeded
- 1/2 cup Feta cheese
- 1 cup plain Greek yogurt
- 1/4 cup fresh herb (basil, mint or cilantro)
- Salt and pepper to taste
- 1 whole wheat pita bread toasted
Instructions:
- Peel and seed avocado then place avocado fruit in a food processor.
- Add cucumber, feta cheese, yogurt and fresh herbs to food processor and blend until mix is smooth like a soup.
Serving Suggestions:
Adjust taste with salt and pepper. Place in refrigerator for one hour before serving with toasted pita bread.
Tip: If soup is too thick, add 1 tablespoon of olive oil and pulse to combine.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
