Baked Seafood Stuffed Avocados Recipe

Makes about 8 avocado half servings

Re-Calculate: Ingredients

Ingredients:
  • 4 ripe, Fresh Hass Avocados
  • 1 (8-oz.) pkg. cooked crab meat or imitation crab
  • 1 (8-oz.) pkg. scallops, cooked
  • Garlic salt, to taste
  • Shredded Parmesan cheese, for topping
  • Mayonnaise, to desired amount
Instructions:
  1. Slice an avocado in half. Slice into the avocado (and not through the shell) bite sized squares. Place the avocado halves on aluminum foil in such a way that they will not tip over. (bunch the aluminum if need be.)
  2. Mix together cooked crab meat, cooked and diced scallops and mayo. (may like to add light bit of garlic salt.) Place a mound of the mixture generously on top of the avocados and top with shredded parmesan cheese. Cook in a 300 degree oven until warm and serve immediately.

* Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
