Ingredients:
  • 1 whole wheat flatbread or pita round
  • 1 ripe, Fresh Hass Avocado, peeled, seeded and mashed
  • 2 Tbsp. baby bella mushrooms, sliced
  • 2 Tbsp. marinated or grilled artichoke hearts
  • Red bell peppers, to taste
  • Marinated sundried tomatoes or tomato paste, to taste
  • Salt and pepper, to taste
  • Dried herb or rosemary mixture, optional
  • 1/2 Tbsp. herbed or olive oil mayonnaise, optional
Instructions:
  1. Spread avocado onto flatbread on both sides.
  2. Layer on ingredients. Fold flatbread over and enjoy!
Serving Suggestions:
Serve on Panini bread with all ingredients except for the avocado toasted with Swiss cheese for a tasty veggie melt.

* Large avocados are recommended for this recipe. A large avocado averages about 5 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
