Ingredients:
- 1 whole wheat flatbread or pita round
- 1 ripe, Fresh Hass Avocado, peeled, seeded and mashed
- 2 Tbsp. baby bella mushrooms, sliced
- 2 Tbsp. marinated or grilled artichoke hearts
- Red bell peppers, to taste
- Marinated sundried tomatoes or tomato paste, to taste
- Salt and pepper, to taste
- Dried herb or rosemary mixture, optional
- 1/2 Tbsp. herbed or olive oil mayonnaise, optional
Instructions:
- Spread avocado onto flatbread on both sides.
- Layer on ingredients. Fold flatbread over and enjoy!
Serving Suggestions:
Serve on Panini bread with all ingredients except for the avocado toasted with Swiss cheese for a tasty veggie melt.
* Large avocados are recommended for this recipe. A large avocado averages about 5 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
