Baked Avocado With Oriental Plum Sauce

- 1 1 1onion, diced
- 1/3 0.33 0.33cup CUP_USVolumesesame oil
- 1 1 1cup CUP_USVolumebutternut squash, roasted, cubed

- 1 1 1red pepper, diced
- 1/2 0.5 0.5cup CUP_USVolumecashew nuts, roughly chopped
- 1/2 0.5 0.5cup CUP_USVolumecoconut, shredded
- 1/4 0.25 0.25cup CUP_USVolumecoriander, fresh
- salt and pepper
- 5 5 5Hass Avocados, halved and peeled (seed removed)
- 1/4 0.25 0.25cup CUP_USVolumesunflower oil
- 1 1 1Tbsp. TABLESPOON_USVolumeseasame oil
- 1/3 0.33 0.33cup CUP_USVolumered onion, diced
- 1 1 1tsp. TEASPOON_USVolumegarlic, minced
- 1/2 0.5 0.5tsp. TEASPOON_USVolumered chili, chopped, seeds removed
- 1/2 0.5 0.5tsp. TEASPOON_USVolumeall-spice
- 1/4 0.25 0.25tsp. TEASPOON_USVolumecurry powder
- 1 1 1lb. POUNDWeightred plums, pitted and roughly chopped
- 1/4 0.25 0.25cup CUP_USVolumesoy sauce
- 1 1 1orange, juiced (reserve zest)
- 2 2 2lemons, juiced (reserve zest)
- 1/4 0.25 0.25cup CUP_USVolumehoney

Baked Avocado
Fry the onion in the sesame oil. Mix with all the other stuffing ingredients. Season it to taste with salt and pepper. Place spoonfuls into the avocado cavity. Bake at 400ºF for 5 minutes, then transfer to a broiler until the top is light brown. Do not over cook the avocados as they will turn bitter. Serve with an oriental plum sauce. -
Plum Sauce
Heat the oils. Fry the onion, garlic, chili, all-spice and curry powder. Add the plums, soy sauce, orange zest and juice, lemon zest and juice and honey and simmer for 1 hour 15 minutes, until thickened and smooth. Stir often to prevent it from sticking on the bottom of the pot.

I made this on Monday night and teddy, Aleah and Eddie LOVED it! Eddie claims it is the BEST recipe that I've ever made. It takes some time to chop/dice, etc, but it was soooo delicious. Very unusual combination, but all the flavors really compliment each other. We all had to have seconds!
