Grilled Irish Beer Marinated Beef Medallions with Goat Cheese topped Tomatoes and Crab-Avocado Vinaigrette Recipe

Beef medallions marinated in Irish stout, then grilled and topped with an avocado and crab vinaigrette and served with grilled goat cheese-topped tomatoes – wow!

Ingredients:
  • 6 Tbsp. olive oil
  • 8 (3-oz.) beef medallions
  • 1 bottle Irish stout beer
  • Salt and pepper to taste
  • 2 large tomatoes, cut into 4 thick slices (ends discarded)
  • 1 cup crumbled goat cheese
  • 1 tsp. finely chopped garlic
  • 1/2 small red onion, finely diced
  • 1 large red pepper, diced (seeds discarded)
  • 1 Tbsp. white wine
  • 2 Tbsp. cane vinegar (substitute: white balsamic vinegar)
  • 1/4 cup pine nuts, chopped and toasted
  • 2 ripe, Fresh Hass Avocados, diced medium
  • 1 lb. jumbo lump crabmeat
  • 1 tsp. finely chopped chives
  • 1 tsp. finely chopped thyme
  • 2 tsp. finely chopped basil
  • 6 oz. mixed lettuces
Instructions:
  1. Marinate the beef medallions in the Irish stout beer.
  2. Turn the grill to a high temperature and brush with a light coat of olive oil. Take the beef out of the Irish stout beer and allow to dry. Season the beef with salt and pepper and grill to your preferred temperature. Season the tomato slices with salt and pepper, put the goat cheese on the tomatoes and grill for 60 seconds.
  3. In a medium skillet, lightly sauté the garlic, onion and peppers in 1/3 of the olive oil. Remove from heat and add the remaining olive oil, white wine, vinegar, pine nuts, avocado, crabmeat, chopped herbs and a pinch of salt and pepper. If cane vinegar isn’t available, you can substitute white balsamic vinegar and still keep the same great flavor. Make sure you use white vinegar or it will change the color of the dish.
  4. Divide lettuces among plates and place grilled beef medallions and tomatoes alongside. Top medallions and lettuces with the crab-avocado vinaigrette and serve.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
