Re-Calculate: Ingredients
- 8 8 8tsp. TEASPOON_USVolumeolive oil, divided
- 1 1 1large shallot, finely chopped
- 2/3 .66 .66cup CUP_USVolumefresh bread crumbs
- 1/3 .33 .33cup CUP_USVolumeshredded Asiago cheese
- 3 3 3Tbsp. TABLESPOON_USVolumelow fat mayonnaise
- 2 2 2Tbsp. TABLESPOON_USVolumefresh lemon juice
- 2 2 2Tbsp. TABLESPOON_USVolumefinely chopped red bell pepper
- 2 2 2Tbsp. TABLESPOON_USVolumefinely chopped Italian parsley leaves
- 1 1 1Tbsp. TABLESPOON_USVolumeDijon style mustard
- 1 1 1egg, beaten
- 1/2 0.5 0.5tsp. TEASPOON_USVolumesalt
- 2 2 2(6 oz.) cans lump crab, rinsed, drained, picked through for shells and squeezed dry
- 1 1 1ripe, Fresh Hass Avocado, seeded, peeled and finely chopped
- 6 6 6cups CUP_USVolumemixed greens
- 6 6 6oranges, peeled and thinly sliced
- 1/3 .33 .33cup CUP_USVolumeprepared balsamic salad dressing
- In small skillet, heat a little less than 1/3 of the oil over medium heat. Add shallots and sauté for 2 minutes.
- In large bowl, combine shallots, bread crumbs, cheese, mayonnaise, lemon juice, bell pepper, parsley, mustard, egg, salt and crab. Cover and refrigerate to allow flavors to blend.
- Stir in avocados. Form crab mixture into 12 cakes and chill for 30 minutes.
- In large skillet, heat remaining oil over medium heat. Add crab cakes and cook for about 3 minutes or until browned, turn and brown other side.
- Serve on a bed of greens and sliced oranges drizzled with dressing.

Crab Cakes
This sounds wonderful but being from Texas, I think I will add a little cayenne pepper and garlic to it or a pinch of chili powder. The recipe only calls for salt. If you saute the onion (shallots) wonder why you don't saute the bell pepper at the same time. Can't wait to try it as is the first time before I alter the recipe. May not need anything else. Looks mmmmm good.

We love Crab Cakes and the Hass Avocados added such a rich, creamy delicious flavor! (I found that I can freeze the crab cakes and then reheat and the Avocado is still great in there!)
