  • 1 1.0 1.0medium-sized red bell pepper, diced (about 1 cup)
  • 1 1.0 1.0medium-sized yellow bell pepper, diced (about 1 cup)
  • 1 1.0 1.0large cucumber, seeded and diced (about 1 cup)
  • 1 1.0 1.0small zucchini, diced (about 1 cup)
  • 1/2 0.50 0.50cup CUP_USVolumefinely chopped jalapeņos (no seeds or ribs)
  • 2 2.0 2.0green onions (scallions), chopped (about 1 cup)
  • 2 2 2Tbsp. TABLESPOON_USVolumechopped parsley
  • 1/4 0.25 0.25cup CUP_USVolumefresh lime juice
  • 3 3 3Tbsp. TABLESPOON_USVolumeolive oil
  • 1 1 1tsp. TEASPOON_USVolumeground cumin
  • 1 1 1Tbsp. TABLESPOON_USVolumesugar
  • 1 1 1Tbsp. TABLESPOON_USVolumesalt
  • 1/2 .50 .50tsp. TEASPOON_USVolumedried oregano
Instructions
  1. In a large bowl, combine avocados, bell peppers, cucumber, zucchini, jalapeņos, green onions and parsley.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, sugar, salt and oregano. Pour over avocado mixture; toss gently.
  3. Serve in lettuce cups or with chips, if desired.
