Re-Calculate: Ingredients
- 12 12 12each (4 oz.) salmon fillets, thinly sliced or lightly pounded
- Salt and pepper as needed
- 3 3 3each large Fresh Hass Avocados, cut into quarters, sliced lengthwise*
- Lemon Chive Mayonnaise (recipe follows)
- 6 6 6cups CUP_USVolumespring greens lettuce mix
- 24 24 24each slices of tomato
- 24 24 24each slices of bacon, cooked crisp
- 24 24 24each slices of 9 grain bread
- 1 1/2 1.5 1.5cups CUP_USVolumemayonnaise
- 2 1/4 2.25 2.25tsp. TEASPOON_USVolumefresh lemon zest, chopped fine
- 2 1/4 2.25 2.25tsp. TEASPOON_USVolumefresh lemon juice
- 1/3 .33 .33cup CUP_USVolumefresh chives, chopped 1/8”
- 1/8 .125 .125tsp. TEASPOON_USVolumekosher salt
- Season the salmon with salt and pepper, then grill.
- Toast the 9 grain bread. Spread each piece with a heaping tablespoon of Lemon Chive Mayonnaise.
- Place 1/2 cup spring greens, 2 slices of tomato and 1/4 each sliced avocado on the base slice of bread.
- Top with grilled salmon, bacon and top slice of bread. Cut in half and serve.
- In a small bowl mix together all ingredients. Refrigerate until needed.
