Try it with a green salsa for St. Paddy's Day. Makes 12 servings.

Ingredients

  • 3 cups lager beer or ale
  • 3 cups flour
  • 2 Tbsp paprika
  • 6 garlic, large cloves chopped finely
  • 3 pounds Hass avocados
  • Vegetable oil - as needed for deep frying
  • Salt - as needed
  • 3 cups salsa

    Instructions
    To make beer batter, whisk together beer, flour, paprika and garlic until well blended; let stand at least 2 hours. Peel and cut half an avocado into 6 wedges. Dredge each wedge in reserved beer batter. Deep fry in 375°F oil until golden brown, about 3 minutes. Drain well; season with salt. Serve with 1/4-cup salsa.

    This main-dish salad serves six.

    Ingredients

    Avocado Cream:

    • 1 Hass avocado, about 8 ounces each, roughly diced
    • 2 Tbsp prepared herbed vinaigrette
    • 2 Tbsp sour cream
    • 1 Tbsp fresh lemon juice
    • ½ tsp salt or to taste
    • ¼ tsp freshly ground black pepper or to taste

    Salad:
    • 9 cups mixed baby salad greens
    • 1 1/8 pounds fresh lump crab meat
    • 2 Hass avocados, about 8 ounces each, sliced thinly
    • Fresh pea shoots or watercress sprigs, as needed for garnish
    Instructions
      Avocado Cream:
      In a blender or food processor, puree avocado until almost smooth. Add vinaigrette, sour cream, and lemon; puree until smooth. Season with salt and pepper.

      Salad:
      Toss greens with half of Avocado Cream; divide half of the greens among 6 serving plates. On top of the greens, divide half the crab among the plates. On top of the crab, divide half the avocado slices. Repeat layers with remaining greens, crab, and avocado. Garnish each plate with dots of Avocado Cream.

    Ingredients

  • 2 slices of bread
  • ½ ripe Hass avocado, sliced
  • Turkey, sliced
  • Tomato, sliced
  • Lettuce
  • Salt and pepper to taste
  • Instructions:
    Start with 2 slices of your favorite bread (toasting is optional). On 1 slice, layer a leaf or two of lettuce, about 4 ounces of sliced turkey and juicy tomato slices. On the other slice fan the slices from one-half of a ripe Hass Avocado. Salt and pepper to your liking. Unite the two sides and dig in.

    Variations:
    Add a couple of strips of cooked bacon. Slather one slice with Dijon mustard, then smear the avocado half and press dried cranberries into the avocado. Roughly mash the avocado with lime and diced chipotle chili pepper before smearing. Substitute grilled chicken - boneless breast or thigh.

    Ingredients

    1 cup vanilla ice cream
    2 oz lowfat milk
    6 oz Hass avocado
    1 1/3 cups of frozen strawberries
    1 Tbsp honey or maple syrup
    1 tsp nutmeg
    1 tsp cinnamon
    Whipped Cream

    Instructions:
    Cut Avocado into half. Put ice cream, milk, avocado, and frozen strawberries into blender. Add honey or maple syrup, nutmeg and cinnamon. Blend until smooth. Pour into 20 oz. serving cup. Top with Whipped Cream. Sprinkle extra nutmeg if desired.
