Who needs a bun when you have an avo-bun? You won’t miss the bread with this Mexican inspired take on the classic egg and cheese sandwich.

Ingredients

egg
mashed
1
fresh avocado*
halved, pitted, peeled and cut crosswise
1/4
cup
shredded Mexican cheese or cheddar cheese
1/4
tsp.
chili powder
3
Tbsp.
salsa
1
tsp.
cilantro
chopped
Instructions 
  1. Heat small non-stick skillet over medium-high heat. Cook egg to desired doneness, topping with cheese and chili powder during last 2 minutes of cooking.
  2. Place half of avocado on serving dish, slicing off bottom, if necessary, to make flat so avocado will stay upright. Fill in hole from avocado pit with some of the salsa. Top with egg, remaining salsa and top of avocado.
  3. Sprinkle with cilantro.
Serving Suggestions: 

*Note: Large avocados are recommended for this recipe. A large avocado averages 8 ounces. If using smaller or larger size avocados, adjust the quantity accordingly.
